Horlicks Tim Tam Ice cream (Malted Ice-cream with chocolate biscuits)

Did I mention that we have this amazing ice-cream maker? Well, we do and it is every bit as amazing as it claims to me. Now, I’m sure its perfectly possible to make delicious ice-cream without it – and I know many people do just that, but for us – with our lifestyle and the amount of ice-cream my husband loves to consume – this is just perfect.

There’s a little artisan ice-cream shop not too far from our place called Salted Caramel and they make some fantastic favoured frozen desserts. One of our favourites is the Horlicks TimTam. And of course, after trying out our no.1 flavour in the machine – we had to do this one next. It’s something I experimented with and the husband thinks it was fabulous – so here goes!

 Ingredients

  • 1 ½ cup of whole milk (the ice-cream turns out really creamy this way – if you prefer it firmer and harder then decrease the milk to a little more than 1 cup)
  • 600 ml of heavy cream
  • 9 tbsp of Horlicks
  • 2 tsps of salt
  • ½ a cup of sugar
  • vanilla extract
  • 6-8 fingers of TimTam biscuits crushed

Method

Heat the milk and add the sugar, salt and horlicks. Stir till the horlicks has completely dissolved and there are no lumps left. This can take a while but it helps if you mix the horlicks in half a cup of milk first and then add the rest.

Add this mix to the cream and stir in well. I do not use a whisk but you can if you wish.

Add in the vanilla extract and put this bowl (covered) in the fridge for about 4 hours. Remove and pour it into the ice cream maker for about 45 mins. Around 25 mins – add in the crushed timtams.  This took longer as the amount of milk was more – hence it will turn out creamier than the previous recipe.

Freeze overnight and enjoy!
